Do you want to know what my favorite meal is? It is a casserole. It can be any kind of casserole but they make my heart happy! What is your favorite meal? Do you share the love of casseroles with me? If so, then you want to try this recipe. It is easy, healthy and good. I would recommend it as a side dish, not a main dish as it doesn’t contain much protein but that is completely up to you!
I co-run a produce co-op and try my best to use up what we have before going and buying more. Once our fridge and cupboards are bear, I go to or order from Aldi and stock up again on everything I know is my go to for meal prepping.
We had a head and a half of cabbage so I searched for a recipe using it. I found a cabbage casserole from The Spruce Eats. It sounded delicious so I went for it. As always, I made a few changes to the recipe but not a ton. Here are the things I did different:
* Instead of 1 small onion, I used ½ of a small onion. (I am not a HUGE onion fan except for onion rings…go figure, but I understand the need for onions and the flavor they add to a dish.)
* Instead of measuring 1/3 cup grated cheese, I just eyeballed what looked good to me. I used a mix of cheddar cheese and mozzarella because I had opened bags that needed used up.
Let me just suggest that you use a wok or very large pan for this recipe. One head of cabbage looks like this coarsely chopped. So much!
When added to the diced onion and garlic in the pan. It looked like this! Let me tell you how hard that was to stir without making a huge mess! I’m sure it would have helped the cabbage cook down more evenly if I could have actually stirred it. Learn from my mistake and start it in a wok!

I couldn’t believe how yummy this was. I salt and peppered it well before cooking and it soaked in the seasoning so well. It was awesome! Fried up a vegan burger on some Texas toast and ate this as a side dish…lots of this.
Wouldn’t you know, as I was taking my beautiful cabbage casserole out of the oven, I spied my next cleaning job. Why! Why are the cleaning tasks never ending. Not only did I have to package up the leftovers, unload and load the dishwasher but I had to clean this dust and grime I saw off the oven as well. My mind wouldn’t let me ignore it. Now I have a sparkly clean oven door!
