I co-run a produce company and we have a delivery this week, yay! This means fresh ingredients are coming my way. I have loved having this and want to make sure that I use up everything that we get before it goes bad. The only way for me to do this is meal planning.
Feel free to follow my plan if you would like but be sure to comment which is your favorite of the recipes. Here are the main ingredients I am working with and the recipes I found to use them up:
Eggs (I have 10 hens so we have a good number of eggs): Bacon, Egg & Cheese Sandwiches
Potatoes (I have a couple bags): Vegetarian Potato Paprikash recipe from The Wanderlust Kitchen. Served with a side of rice and fresh fruit.
Swiss Chard: Easy Swiss Chard w/ Lemon, Quinoa, Capers & Olives from The Wimpy Vegetarian. This will be a side served with a main course of vegetarian burgers that we have leftover from a couple days ago.
Tomato & Zucchini: Vegan Tomato Zucchini Casserole from Give Recipes. I mean casseroles…what is not to love about them! For the meat eaters in my family, I will serve this with a grilled chicken breast.
Asparagus: Creamy Vegan Asparagus Pasta from The Minimalist Baker. I would have to say, this is my favorite recipe blog. I get the most recipes from here! Fresh fruit as a side.
Green Peppers: Mexican Quinoa Stuffed Peppers from The Minimalist Baker. Served as a main course with a side of chips and salsa.
